Twin Spruce Farm raises Belted Galloway cattle, known for their hearty nature and high quality beef production. Our 70-acre farm located in the Hudson valley is committed to producing all natural, grassfed beef.  Our cows thrive on an all grass diet while rotationally grazing on our acreage during the spring, summer and fall. In the winter months they dine on locally sourced baleage.

Why do we love Belties?


The Belted Galloway is a extremely hardy heritage beef breed of cattle originating from Scotland.  “Belties” are excellent foragers and efficient feed converters, making them highly suitable as a grass fed beef producer. Their meat is not only well marbled and known to be considerably low in saturated fat content, but it tastes great too.

But the real reasons we love them? Because they are fuzzy, cute, and friendly all of which makes them very nice to have around.

Why do we raise our cows on grass?

  • Grassfed meat has about the same amount of fat as skinless chicken or wild deer and is low in calories.
  • Although grassfed meat is low in “bad” fat (including saturated fat), it gives you from two to six times more of a type of “good” fat in the form of omega-3 fatty acids.
  • The meat and milk from grassfed cows are the richest known source of another type of good fat called “conjugated linoleic acid” or CLA. Studies have shown CLA can greatly reduced tumor growth in cancer.

Twin Spruce Farm beef products are served at Lekker in Stone Ridge, NY and Bell Book and Candle in NYC.

We sell individually packaged cuts to the public, available for pick up at TFS. We deliver locally for orders over $100.
